Key Responsibilities
In this pivotal kitchen leadership role, you will be responsible for overseeing a section of our high-volume galley. Your duties will include:
- Executing all culinary production in your assigned station according to precise Company recipes, specifications, and the daily production schedule.
- Maintaining and organising recipe files and ensuring all team members in your section follow established standards.
- Proactively managing ingredient consumption and informing senior chefs of any fluctuations or needs.
- Coaching, training, and motivating Commis Chefs in recipe knowledge, production skills, culinary techniques, and safety standards.
- Strictly ensuring compliance with all Company, USPH, safety, and environmental regulations within your section.
- Minimising food waste through careful handling, utilisation of materials, and training staff in efficient practices.
Qualifications
To be successful in this role, you must possess:
- A formal qualification in Culinary Arts from a recognised institution.
- A minimum of four years of experience in a high-volume culinary environment (hotels, resorts, or cruise ships), including at least one year in a Demi Chef de Partie or equivalent role.
- Strong knowledge of Western cuisines and a solid understanding of public health and sanitation regulations.
- Excellent command of the English language (verbal and written).
- Demonstrated leadership ability to train and motivate a team effectively.
- Outstanding interpersonal skills and the ability to thrive in a diverse, multicultural environment.
- Possession of an STCW Ship’s Cook Certificate is highly recommended.
